Pumpkin Banana Muffins

Here is a delicious and easy recipe for pumpkin banana muffins.  

These pumpkin banana muffins are healthy, moist, and a perfect snack for toddlers, kids, and adults, too!

You can make a large batch and freeze them so you have a quick pre-made snack for kids.  I try making large batches of these muffins but they never last long.  These get eaten up so fast!  

My whole family eats these muffins!  We eat them for snacks or a quick breakfast.  Does your family love muffins, too?

Pumpkin Banana Muffins

These pumpkin banana muffins have no refined sugar and are nutritious, making them a great snack for kids.

Pumpkin has vitamins A and C, antioxidants, and are full of fiber. 

I used canned pumpkin for this but you could probably use steamed pureed pumpkin (from frozen).

Healthy Pumpkin Spice Muffins

Ingredients for the Pumpkin Banana Muffins:

  • 1/3 cup coconut oil (melted and cooled)
  • 1/3 cup pure maple syrup
  • 2 eggs
  • 2 Bananas
  • 1 cup pumpkin puree (I used canned)
  • 1/4 cup milk (I used whole milk)
  • 1 tsp. vanilla extract
  • 2 tsp. pumpkin pie spice
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 3/4 cups white whole wheat flour (all-purpose or whole wheat will work)
  • 1/2 cup chocolate chips (optional)

Instructions for Pumpkin Banana Muffins:

  • Mash bananas well in a large bowl.
  • Mix in all wet ingredients into the mashed banana (coconut oil, maple syrup, eggs, pumpkin, milk, vanilla)
  • Add in the pumpkin spice, baking soda, and salt – stir.
  • Mix the flour in (don’t overmix or muffins can be tough)
  • Fold in chocolate chips.
  • Pour into a well-greased muffin tin filling about 2/3 full.  I used silicone liners and didn’t grease and they came out easily.
  • Bake at 350 degrees Farenhight for 22-24 minutes or until a toothpick comes out clean.

Easy Pumpkin Muffins

These muffins are moist and sweet, but not overly sweet.

If you use a can of pumpkin, there will be leftover.
