Healthy Banana Blueberry Muffins

All my kids love muffins and these healthy banana blueberry muffins are perfect for busy mornings when you make them ahead.

Banana Blueberry Muffin Recipe

Ingredients:

  • 1.5 cups flour (I used white whole wheat but whole wheat or all-purpose would work well)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt (I use pink Himalayan) 
  • 2 overripe bananas
  • 2 eggs
  • 1/2 cup melted butter (or melted coconut oil) (cooled)
  • 1/3 cup pure maple syrup
  • 1/2 cup plain greek yogurt (use whole milk yogurt or regular if you don’t have greek)
  • 1 tsp vanilla
  • 1.5 cup blueberries (fresh or frozen) or sub with chocolate chips

Blueberry Muffins No Refined Sugar

Instructions:

    1. Preheat oven to 375F and spray a muffin tin or use liners.
    2. Mash bananas in a large bowl
    3. Add whisked eggs, melted butter, maple syrup, yogurt, and vanilla to the bananas.  Mix well.
    4. Add in baking soda, baking powder, and salt.  Mix ingredients.
    5. Put in flour – mix but do not overmix the flour.
    6. Fold in blueberries – you do not need to defrost if using frozen blueberries. 
    7. I coated my frozen wild blueberries in 1 teaspoon of flour (this is supposed to help them not sink to the bottom of the muffins when they bake).  Just mix 1 teaspoon flour with the blueberries in a separate bowl. 
    8. Fill muffin tin 3/4 with batter.
    9. Bake 16-18 minutes or until a toothpick comes out clean.

Blueberry Muffin Recipe For Kids

Store these healthy banana blueberry muffins in an airtight container or keep them in the refrigerator or freezer.  

If you store them in the freezer just pop in the microwave to thaw quickly or set out prior to eating.

We eat these muffins for snacks and a quick breakfast.  These are also good for lunch boxes!
