These breakfast meal ideas are even good for kids and adults – I ate these myself!

While all of these healthy toddler breakfast ideas contain vegetables, they were all simple and fast!  If you have a toddler you’re busy and probably don’t have lots of time to cook.

I rarely make food that takes a long time to cook or is complicated anymore, for breakfast anyway.  Here are some simple vegetable toddler breakfast ideas.

Easy and healthy toddler breakfast ideas with vegetables my 2-year-old toddlers ate over the last couple of weeks:

Simple Toddler Breakfast

  • Berry Beet Waffle (store-bought)
  • Roasted Brocolli (leftover from dinner the night before – this was the first thing my twins ate off the plate)
  • 1/2 Hard Boiled Egg

Healthy Food For Toddler

  • Scrambled eggs with spinach
  • Fresh blueberries
  • Black beans (canned)

Just put spinach (fresh or frozen) in the scrambled eggs when they have a couple of minutes left to cook.  They’re also really good with some cheese added in.

  • 1/2 Sweet potato with skin removed (leftovers from dinner) with butter, ceylon cinnamon and drizzled with honey (make sure your child is over 1 year old if giving honey)
  • Plain whole milk yogurt with honey
  • Instant organic oatmeal with chopped dates, slivered almonds and butter (make sure to slice small so it doesn’t pose a choking hazard or omit for toddlers not chewing solids well)

  • Berry Spinach Smoothie (just frozen berries, frozen spinach, yogurt, and avocado with a little water)
  • I usually serve toast with my toddlers’ smoothies

Smoothies are so good for busy mornings while adding in a lot of nutrition.  You can even add oats to these to make them more filling – and it’s so easy to add vegetables like spinach and kale since it hides the taste.  These cups (affiliate link) are my favorite for smoothies and good for on-the-go.


Good Meals For Toddlers

  • Scrambled eggs and avocado
  • Spinach Blender Pancakes 
    • Recipe: 1 cup oats, 1 egg, 1/2 cup milk, 1 ripe banana, 1 cup spinach, 1 tsp. baking powder, 1 tsp. vanilla extract, 1/4 tsp. salt. 
    • Mix in blender and cook like you would regular pancakes.  I served these with a side of honey (make sure your child is over 1 year old if serving honey or sub with pure maple syrup).  Make a double or triple batch and keep them in the fridge or freezer for snacks or a quick breakfast for another morning!
    • I cooked the eggs right after I cooked the pancakes so the pan was still hot so they cooked really fast.

Meals For A Toddler

  • Spinach Toddler Pops – 1 ripe pear, 1/4 cup spinach, 1/2 avocado.  Add a tiny bit of water if you need to get it smooth.
  • Blend until smooth and pour into popsicle molds. I used these molds (affiliate link).
  • Serve with toast, oatmeal, or a hard-boiled egg to make it a quick and easy breakfast.  Make these the night before so they can freeze.  My twins love this popsicle recipe- and especially popsicles for breakfast!

Toddler Breakfast Ideas

  • Plain whole-milk yogurt
  • Sliced cucumber (slice thin and small for younger children)
  • Pumpkin pancakes 
    • 1 cup canned pumpkin, 2 eggs, 1/4 teaspoon cinnamon and a pinch of pink Himalayan salt. 
    • Mix well and cook on the stovetop like you would regular pancakes. 
    • The texture will be different than regular pancakes but my boys loved these served with some butter and pure maple syrup.

Healthy Food For Toddler

  • Mini Muffin Tin Dutch Babies made with just milk, eggs, and flour and your favorite add-ins!  
  • Add in spinach and cheese, or fruit your toddler likes.

Toddler Breakfast Ideas

  • Spinach Muffins – Sometimes I serve these for breakfast and sometimes they have these for snacks.
  • Apples and sunflower seeds

How to easily incorporate vegetables into your toddler’s breakfast meals:

Use leftovers from dinner.   I always cook more vegetables than we will eat at dinner for the purpose of having leftovers.  I serve them with breakfast and lunches that way it cuts down on prep work the next day.

It’s all about being consistent and offering vegetables (or other foods), even if they won’t eat it every time.  I never make a big deal about broccoli being on my toddlers’ plate with breakfast, it’s just served that way (If they eat it great, if they don’t oh well!).  It has consistently been the first thing my boys eat off their breakfast plate (and want more!).  And I’m sure that will change next week!

If they don’t eat the majority of something on their plate, I will put it in the fridge and offer it (along with other food) for the next meal.  This way food doesn’t go to waste and they are being exposed more often to it (and hence more likely to try it).
