Spinach Pancakes

Spinach pancakes are a healthy spin on regular pancakes.

These spinach pancakes with banana are gluten-free, dairy-free, and sweetened only with fruit, and your baby, toddler, or kids can eat these!

My kids eat these spinach pancakes for breakfast and snacks.  They are packed with nutrients and are moist and delicious. 

And these banana spinach pancakes are quick to make!  I make them in about 10 minutes so they are good for busy mornings.

You mix the spinach pancakes in a blender so cleanup is easy, too!

Lately, I’ve been trying to add some sort of vegetable in with my kids’ breakfast.  These pancakes are an easy way to add veggies into your child’s meals.

What I love even more about this recipe is that there is no added sugar!  All of the sweetness comes from a very ripe banana. 

These pancakes also make a quick snack idea for kids.  Just pop one in the toaster to heat it up – or even eat them cold as my kids do!

Sometimes we put syrup and butter on these, and sometimes we eat them plain.

Ingredients:for Banana Spinach Pancakes:

  • Oats – 1 cup
  • Spinach – 1 cup (I used fresh spinach for these)
  • 1 egg
  • 1/2 cup unsweetened almond milk (any variety of milk will work – soy, cow milk, oat milk, etc.)
  • 1 very ripe banana
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground flax (optional)

*If making these banana spinach pancakes for your baby, omit the salt.  I fed these pancakes to my babies when they were around 9 months old.

Instructions for Spinach Banana Pancakes:

  • Add all ingredients to a blender and mix until smooth. Usually, I will mix the oats first, then add the rest of the ingredients to that in the blender and mi
  • Cook on medium heat for 1-3 mins. per side or until cooked through.  I always butter the pan or use non-stick.
  • This batch yields about 8 small pancakes.
  • Refrigerate or freeze any leftovers
